| This wine gets
its name from one of the emblematic monuments of Montalcino,
the Romanesque Abbey of Sant'Antimo. Built in the XII century
at the foot of the hill of Castelnuovo dell'Abate, in solitary
majesty, it stands today in the valley surrounded by vineyards,
olive groves and cypress trees, with all the mysticism of days
gone by. The winemakers of the area wanted a DOC designation
for all those fine quality wines which, even though they do
not fall into existing categories have, in recent years earned
an excellent reputation among wine lovers. |

The grapes are grown along with those
used to make the other wines of Montalcino with the exception
of a small section of the land in the north?eastern part of
this territory.

|
Rosso and
Bianco: red & white recommended and/or authorised grapes
for the Siena area. The red wines can be classified as Novello,
Chardonnay, Sauvignon, Pinot grigio, Pinot nero, Cabernet Sauvignon
and Merlot. For these red wines at least 85% of the corresponding
grapes are used, and up to 15% of other grapes.
Vin Santo: Trebbiano toscano and Malvasia bianca are
used singly or together (min. 70%, max 100%).
Vin Santo Occhio di Pernice: Sangiovese (50%?70%), Malvasia
nera (30?50%). There is also a Riserva specification for these
last two wines. The grape yield is 90 quintals per hectare (19,840
lbs.) with the exception of Cabernet, Pinot nero and Merlot
for which it is 80 quintals/hectare (17,636 lbs.). |

Organoleptic Characteristics |
|
Rosso:
ruby red tending to garnet with ageing; the perfume is pleasant
and vinous; the flavour is balanced and full, occasionally austere.
Min. alcohol: 12°. Bianco: straw yellow colour with a delicate
and pleasant bouquet; the flavour is dry, full and balanced.
Min. alcohol: 11.5°.
Vin Santo: colour ranges from golden straw yellow to
deep amber; the perfume is typical ethereal and intense; the
flavour is balanced and velvety, the off?dry version is rounder
in taste. Min. alcohol:16°.
Vin Santo Occhio di Pernice: colour ranges from pale
to deep pink with intense and warm bouquet; the flavour is sweet,
soft, velvety, and round. Min alcohol: 16°.
Chardonnay: straw yellow colour; the perfume is delicate,
pleasant and characteristic; the taste is dry, full and balanced
flavour. Min alcohol: 11.5°. Sauvignon: straw yellow
colour with a distinctive and intense bouquet; the flavour is
dry, balanced and slightly tangy. Min. alcohol: 11.5°.
Pinot Grigio: straw yellow colour with a delicate and
floral bouquet; the flavour is dry and balanced. Min. alcohol:
11.5°.
Cabernet Sauvignon: deep ruby red colour with a characteristic
intense bouquet; the flavour is full, velvety and nicely tannic.
Min. alcohol: 12°.
Merlot: deep ruby red with an intense bouquet; the flavour
is full, velvety and slightly fruity. Min. alcohol: 12°. Pinot
Nero: weak ruby red colour with a typical strong bouquet, sometimes
with a touch of strawberry; the flavour is dry and velvety.
Min. alcohol: 12°.
Novello: ruby red with violet highlights; the bouquet
is fresh and fruity, with a hint of freshly squeezed grapes;
the flavour is light, vinous and pleasant. Min. alcohol: 11°.

excellent with a wide selection of foods: red meats and cheeses
for the red wines; fish, soups and hors d'oeuvres for the white
wines; cold cuts, croutons and pasta with meat sauce for the
Novello; cakes and pastries for the Vin Santo. |
