History and Landscape
Along with Vernaccia di San Gimignano DOCG, other DOC wines are produced in the territory of San Gimignano. The name San Gimignano includes several types of wines: Rosso, Novello, Rosso Riserva, Rosato, Vin Santo and Vin Santo Occhio di Pernice, plus the red and rosé Sangiovese. The name was acknowledged only recently: in August 1996. The professionalism of wine makers, the geological characteristics and the climate make this area perfect for vine?growing. Moreover, special attention is paid to the safeguard of the environment and genuine produce. Many wine makers indeed take part in special programs for the implementation of biological farming techniques. Vine?growing is the most important and productive sector of San Gimignano's economy, both as concern profit and employment. The production of wine in San Gimignano is also linked to the history and culture of this area, which contributes to make the local produce one of the most sought?after Tuscan wines. Since the old times the farmers of this area called the local red wine "Vino Nero", and the name Vin Santo has been known for ages.
Area of Production

San Gimignano wines must be produced exclusively with grapes grown in the territory of San Gimignano, on hills well exposed to sunlight and at a maximum altitude of 500 m on sea level.

 

The Grapes
The Rosso, Novello and Rosso Riserva types are obtained from Sangiovese (minimum 50%) and other red grapes (maximum 50%). The wine is named Sangiovese if this grape accounts for at least 85% of grapes. The Rosé variety is produced with Sangiovese (minimum 60%), Canaiolo nero (up to 20%),Trebbiano toscano, Malvasia del Chianti and Vernaccia di San Gimignano (up to 15% maximum), plus other complementary red grapes up to 15%. Rosé wine also includes the Sangiovese variety. Vin Santo is obtained from Malvasia del Chianti grapes (up to 50% maximum), Trebbiano toscano (30% minimum), Vernaccia di San Gimignano (20% maximum), plus other complementary grapes (10% maximum). Vin Santo Occhio di Pernice is mostly produced with Sangiovese (70?100%)potentially adding other red grapes. The yield per hectare cannot exceed 100 quintals (22,045 lbs.) for all varieties..
Organoleptic Characteristics
San Gimignano Rosso: from pale to deep ruby red tending to garnet with age; the bouquet is delicate and vinous; the flavour is dry, balanced, nicely tannic and medium bodied. Min. alcohol: 11.5° (12° for Riserva).
San Gimignano Novello: pale ruby red with violet hues; the perfume is intense, vinous and fruity; the flavour is smooth, velvety and sapid. Min. alcohol: 11°.
San Gimignano Rosato: from pale to deep rosé colour with ruby hues; the bouquet is delicate and fruity, with hints of freshly squeezed grapes; the flavour is delicate, balanced and velvety. Min. alcohol: 10.5°.
San Gimignano Vin Santo: from golden to more or less deep amber; the perfume is typical, ethereal, intense and delicate; the flavour is from dry to off?dry, full, smooth and persistent. Min. alcohol: 16.5°.
San Gimignano Vin Santo Occhio di Pernice: from deep to pale rosé colour with an intense bouquet; the flavour is sweet, smooth, velvety and round. Min. alcohol: 16°.
Food Matches
These wines are a perfect accompaniment to red meat dishes, roasts, game and mature cheeses. The rosé wine is specifically suggested for cold cuts, and Vin Santo goes well with cakes and biscuits.
